Properties
Garlic is a member of the onion family and contains numerous active compounds, many of which have been shown to have health benefits. Some of these compounds are thought to play several roles. Sulfur compounds, for example, are associated with the prevention of both cancer and cardiovascular disease.
Garlic is traditionally used for its antimicrobial properties and to treat certain infections. It contains various antioxidant compounds such as flavonoids and tocopherols, in addition to sulfur compounds which are also thought to contribute to its antioxidant activity. Particularly noteworthy is allicin, associated with garlic's cardioprotective effect, including its ability to reduce atherosclerotic plaques in animals. This active ingredient helps maintain the flexibility of the arteries, reducing high blood pressure and cholesterol levels.
It should be noted that the enzyme found in garlic, which enables the formation of allicin and other compounds potentially beneficial to the body, is deactivated by heat. The properties of raw garlic are therefore superior to those of cooked garlic.
